  发酵配料时,加的玉米粉越多,酒香味越浓厚,加的玉米粉少,则酸香味比较突出,酒香味不浓。需要指出的是:产生比较明显的酒香味的时间,只是在发酵旺盛期才有,且只有几小进,发酵旺盛期过后,则闻不到酒香味。如果发酵旺盛期是在夜间,则可能您错过了闻到酒香味的时机,一般发酵旺盛期出现在发酵两天左右。
